My sweet friend, Joy Bella, the waffle recipe maker extraordinaire, has shared her recipe with me – and now you!

How good are these waffles? So. Good.

(in my head I read the word “waffles”, I hear: WAFFLES WAFFLES WAFFLES! Waffles are exciting!)

I ain’t even kidding.

Most any waffles are good. Most any waffles are great. But all waffles are not created equal.

 

How good are these Belgian waffles I’m about to go on and on about?

So. Good.

The best.

In the world.

In other words, you must try them.

In a nutshell: this is the best homemade Belgian waffle recipe I’ve ever made.

Not even a drop of hyperbole.

I know there a many, many, many, Belgian waffle recipes on the Internet, but come on, give these a try. I defy you to find a better recipe.

Fluffy waffles on the inside, crispy waffles on the outside (of course you can cook a bit less if you prefer a non-crispy waffle).

Not pancakes, which are surely tasty, but…WAFFLES!

Speaking of pancakes…

Can I use pancake mix for waffles?

Yes, you can absolutely use your favorite pancake mix for waffles, with these caveats:

  • If you are using a dry pancake mix: add an additional 2 tablespoons of oil.
  • If you are using your own pancake recipe – STOP! – and use my waffle recipe instead!

If you insist on using a mix, I got ya.

Did you know that Krusteaz pancake mix for waffles is delightful?

I’m sure all the other mixes are too. Simply read their instructions on how to modify the pancake mix for waffles.

But, still, you should try my recipe as well!

Man, I love waffles, don’t you?  Who doesn’t love waffles?! 

Not rhetorical.  Come on, answer the question.

DONCHA LOVE WAFFLEZ?!

A resounding YES! echos back from all over the Internets!

Just as I suspected. 

For those of you who answered in the negative, my theory is this: If you don’t love waffles, then you simply haven’t had my waffles.

Oh! Before we go any further, let me clarify: you can use this waffle recipe in any waffle maker, Belgian or otherwise.

What is the difference between a Belgian waffle and a regular waffle?

Belgian waffles have deep pockets, like the one in the picture above.

I just happen to have a Villaware Belgian waffle maker, so of course that’s what I’m using, but maybe you don’t.

It’s okay; use what you gots!

What follows is an actual conversation that was had the last time I visited the kiddos and made Sweet E waffles (from a mix – not homemade).

Girl: Whose waffles are better? Choochie’s or Daddy’s?

Daddy’s!

Girl: Are you kidding?! Choochie’s are SO MUCH BETTER!

Me to Girl: Oh, hai – these aren’t homemade; they’re from a mix.

And that’s what happens when you don’t go homemade: you get 2nd place.

Go homemade or GO HOME!

Waffles originating from anywhere are okay with me – but Girl had a point: homemade is better ever’ stinkin’ time.

BONUS TIP: Make this pineapple honey glaze to top yer homemade waffles. You will never ever regret it.

The waffles from the recipe below are my favs (and Boy’s and Girl’s and Garry’s and Sweet E’s – I think!) – they are the best waffles in the world to us!

I haven’t shared my beloved waffle recipe in some time – and I know you’ve been searching for the best waffle recipe in the land.

Seriously, look no further.

So, how good are they?

So. Good.

The day I made these waffles, they became an instant family favorite – I had found waffle nirvana.

While pancakes are tasty and easy, some days, some occasions, call for waffles.

Sweet babies, you gotta know by now that OMT! ain’t messin’ around when she says something she makes is deeeee-lish. 

This particular recipe is a little more complex than most, but I’m telling you that these waffles are worth the effort to make.

They are light enough to make you roll your eyes in ecstasy (done it).

Firm enough to hold up to rivers of maple syrup and mounds of butter (done it).

And delicious enough that they’ll show up in your dreams (over and over again).

Pretty bold, right?

The truth usually is.

This is the best Belgian waffle recipe I’ve ever made.

They are light, yet filling, and sure to put a smile on your waffle-lover’s face.

Just talking about them is making me waffle-hungry!

I’ll ask ya again: Who doesn’t love waffles?!

How much batter to put in waffle maker?

I like to make a fat X inside the waffle maker, coming within a half inch or so from edge.

You might find you need more or less, depending on your waffle maker.

How long to cook waffles in a waffle maker?

Again, this depends on your machine. 

Mine has a handy dial for crispiness, so I can make everyone their level of yumminess.

If yours doesn’t, you’ll have to make a few and time each waffle to see how long it will take.

Go by smell. Once you smell a deep waffle smell, check for doneness.

How to keep Belgian waffles crispy:

The easiest way to keep waffles crisp until serving is to place them directly on an oven rack on a very low oven.

This way the warm air circulates around them, keeping the crispy parts crispy!

How many calories in a Belgian waffle?

I answer the hard hitting questions here!

The answer depends on the size of your square. My waffle maker is fairly large, so the calorie count will be higher than most (but totally worth it!): appx. 351 calories per waffle.

Many waffle makers are smaller and the waffles can range from the 150 calorie mark on up to mine.

My advice? Don’t worry about the calories – focus on the joy!

What to put on waffles?

Um, I think the true question is: is there anything that doesn’t go on a waffle?

No! 

Put whatever you like on your waffle:

  • Jam
  • Cream Cheese
  • Whipped cream
  • Chicken
  • Syrup
  • Nut butter
  • Chocolate
  •  

Typically, if I’m going to the trouble of making these waffles, I’m doubling the waffle goodness. 

  1. We eat what we want, then put the rest in the fridge or freezer. 
  2. They’re a great grab-n-go waffle for the kids before school, as they can be eaten cold or warmed up.  
  3. They’re an easy afternoon snack smeared with peanut butter and raisins.  They’re a fun indulgent supper when you’ve had a hard day.

Since I dislike buying frozen waffles (they remind me of hockey pucks), making this recipe serves two purposes:

  • The taste is far superior to frozen.
  • They cannot be used as Frisbees by your creative children.

MOMMA/DADDY/GRANDPARENT win!

We’ve topped them with pineapple honey glaze, peach preserves, eggs and bacon, Maple Syrup, peanut butter and whipped cream. 

Soon, I’m trying a cookie butter version!

The day it dies, I’m gonna be the saddest Choochie in the land. I may even hold a wake in its honor. Nothing weird about that, right?

RIGHT?!?!

Most of the year it resides in a cabinet, collecting dust, but when the time comes to make waffles, this waffle maker is a thang of beauty – it shines!

Workhorse, it is. And easy peasy to clean.

Cause let’s be honest: when you’re making waffles it usually means you have a house full o’people, and no one is gonna want to spend their time cleaning waffle maker grooves, right?

~shudder~

In all the years I’ve used this Villaware Belgian waffle maker,  don’t think it’s ever took more than a simple wiping down to clean it.

Lastly, I’m not a fan of non-stick cookware, but this waffle maker is my exception (mostly because of eliminating time-consuming cleaning the grooves issue).

Not only do the waffles come out easily, there is rarely a need to add oil or butter to the maker to ensue waffles come out with ease.

Um, can you tell, I truly love my waffle maker?

You just gotta do is find the soon-to-be happy eaters.

Joy Bella Waffle Recipe

Better known as the…

Best Waffle Mix

(printable one below)

Ingredients:

  • 1 3/4 cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 1 tsp vanilla
  • 3 eggs, separated
  • 1 1/2 cup milk
  • 7 tablespoons vegetable oil

Instructions:

  1. Sift (or whisk) dry ingredients.
  2. Beat egg whites until stiff.
  3. Add egg yolks, milk and oil to dry ingredients. Using a hand mixer, mix together thoroughly.
  4. Gently fold egg whites into batter.
  5. Pour batter onto waffle grid in an X-pattern.

Notes:

always double this recipe when feeding more than four adults.

If you have leftovers, either store them in the fridge for the week (in a zip-lock bag) or freeze.
